The fruit is lightly pressed before fermentation and aged in a ceramic egg - a vessel that enhances texture and complexity while maintaining the wine’s signature freshness. The result is a dry and refreshingly crisp expression of Gewürztraminer, with all the exotic appeal that makes this varietal so beloved.

On the nose, it’s a fragrant medley of lemon, lime, and sea salt, softened by juicy notes of rock melon, lime soda, lychee, and green grapes. The palate is just as exciting, opening with a burst of freshly squeezed lemon and sea salt, balanced by a fine chalky grip and delicate hints of white flowers.

Grace + Sophie Darling | Darling Estate

Grace and Sophie Darling are at the helm of Darling Estate, continuing a winemaking legacy that began when their great-grandfather, Frederick Darling, settled in Cheshunt in 1919. What started as apple orchards and tobacco farming evolved into vineyards, with Guy Darling planting the first vines in the King Valley in 1970. For decades, Koombahla fruit supplied Brown Brothers, contributing to award-winning wines before the family began producing their own under the Darling Estate label in the 1990s.

Today, the sisters oversee both vineyard and winemaking operations, pioneering Australian Aligoté with the country’s largest planting of the variety. Their commitment to minimal intervention winemaking and sustainable vineyard practices ensures wines that are pure, expressive, and true to the terroir.
