This is as far from a Hunter Valley Shiraz as you can get! A blend of fruit from two parcels - Broke + Pokolbin. One was direct pressed to oak, and the other went through carbonic maceration before being basket pressed to stainless steel. The result ~ a light, silky thirst-quenching chilled red, with depth and purity.

About the winemaker

Peta Kotz is a Hunter Valley native who is passionate about making honest, small-batch, lo-fi wines that showcase the region’s traditional varieties in a new light. She is the founder and winemaker of Sabi Wabi, a label inspired by the Japanese philosophy of finding beauty in imperfection.

She focuses on semillon, the Hunter’s signature grape, and experiments with different techniques such as ceramic and neutral oak fermentation, skin contact and carbonic maceration. She also makes chardonnay, syrah and pét-nat from organic and biodynamic vineyards.

Peta has worked at progressive Hunter producers such as Krinklewood and M&J Becker, and has also gained experience in Burgundy, France. She was awarded the Winemaker’s Choice trophy at the Young Gun of Wine Awards 2022, a peer-voted recognition of her talent and vision. Peta’s wines are expressive, textural and full of personality, reflecting her love for semillon and the Hunter Valley.
