Fermentation is magic, and no one knows it better than Chiho Uei of Shibuki Witchcraft. In this intimate, hands-on workshop, Chiho will guide us through the art of Bodaimoto Doburoku, a farmhouse sake making (ancient and rustic in style), revealing the intricate process behind one of Japan’s most revered beverages. Over three hours at Famelia, you’ll not only learn the fundamentals, but also get hands-on with the process, taking home your own fermentation mash - the foundation for making your own sake - to care for at home. Chiho will also show us how sakekasu (sake mash) can also be used in cooking and pickling, opening up new ways to explore the magic of fermentation beyond sake. How cool!
The experience will kick off with a Yuzushu spritz and small bites before diving into the sake brewing. Chiho will additionally guide us through a sake tasting with matching sake-mash fermented delicacies. We’ll sample a selection of Chiho’s own sakes, while Amelia will introduce two more sakes by women, to round out the afternoon.
With only 10 spots available, this is a rare chance to learn from a true master in an intimate and welcoming setting.
